Curries have an extensive history, rich with diverse regional variations, and they continue to captivate our taste buds with their aromatic blend of spices and comforting textures. Today, we’re delving into the heart of curry culture with a contemporary twist: Instant Pot Coconut Curry Lentils. This dish offers a fusion of Southeast Asian flavors and modern convenience, perfectly suited for busy weeknight dinners or special gatherings.

Historical Context

The concept of curry itself dates back centuries, originating in the Indian subcontinent and gradually evolving as it spread to various corners of the globe. Indian curry dishes often feature lentils as a primary ingredient, owing to their abundance in the region and their nutritional value. As curries gained international popularity, they underwent regional adaptations, leading to the emergence of Thai and Southeast Asian curry styles that prominently feature coconut milk, a distinctive element that sets them apart.

Follow these steps to create your Instant Pot Coconut Curry Lentils:

1. Prep Your Ingredients:

  • Rinse and drain the lentils thoroughly.
  • Chop the onion, dice the red bell pepper, mince the garlic, and grate the ginger.
  • Open the cans of coconut milk and diced tomatoes.

2. Sauté the Aromatics:

  • Turn on the Instant Pot and select the Sauté function. Add vegetable oil and let it heat up.
  • Toss in the chopped onion, minced garlic, and grated ginger. Sauté for about 2-3 minutes until they become fragrant and the onion turns translucent.

3. Add the Spices:

  • Stir in the curry powder, ground cumin, ground coriander, turmeric powder, red pepper flakes, salt, and black pepper. Sauté for an additional 1-2 minutes to bloom the spices, ensuring they coat the aromatics evenly.

4. Pressure Cook:

  • Add the rinsed lentils, diced red bell pepper, canned coconut milk, and diced tomatoes to the Instant Pot. Give everything a good stir to combine.
  • Close the Instant Pot lid and set the valve to the Sealing position.
  • Select the Manual or Pressure Cook function and set it to cook on high pressure for 10 minutes.

5. Natural Release and Serve:

  • Once the cooking cycle is complete, allow for a natural pressure release for about 10 minutes. Carefully release any remaining pressure manually.
  • Open the Instant Pot and give the lentils a final stir. Taste and adjust the seasoning if needed.
  • Ladle the Instant Pot Coconut Curry Lentils into serving bowls, garnish with fresh cilantro leaves, and serve hot.

6. Optional Serving Suggestion:

  • This dish pairs wonderfully with cooked rice or warm naan bread, making it a complete and satisfying meal.
