  • 1 tablespoon vegetable oil

  • 1 onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 lb thinly sliced ribeye or top round

  • 4 hoagie rolls, split

  • 8 oz provolone cheese, sliced thin

  • Salt and pepper to taste


Heat oil in a large skillet over medium-high heat. Add onion and bell pepper. Cook 5 minutes until softened. Transfer to a plate.
Add beef strips to the skillet. Cook for 3-4 minutes, stirring frequently, until browned but still pink inside. Return veggies to skillet.
Divide mixture among hoagie rolls. Top with provolone cheese. Broil 1-2 minutes to melt cheese.
Season with salt and pepper to taste. Serve immediately.
