It’s inspired by the traditional Caprese salad, which typically consists of tomatoes, fresh mozzarella, basil leaves, and a drizzle of olive oil. This salad, named after the island, is believed to have been created in the 1950s and quickly gained popularity not only in Italy but worldwide for its simplicity and vibrant flavors.

Over time, culinary enthusiasts began experimenting with ways to incorporate these delectable ingredients into various dishes, leading to the birth of the Caprese Panini. The introduction of the panini press, a sandwich grill, added a crispy and toasted dimension to this Italian classic.


1. Prepare the Pesto Mayo:

  • In a food processor or blender, combine the fresh basil leaves, pine nuts, minced garlic, grated Parmesan cheese, and a pinch of salt and pepper.
  • While blending, gradually drizzle in the extra-virgin olive oil until the mixture forms a smooth paste.
  • Transfer the pesto mixture to a small bowl and stir in the mayonnaise until well combined. Set aside.

2. Assemble the Caprese Panini:

  • Lay out the 4 slices of Italian bread on a clean surface.
  • On two of the slices, spread a generous layer of the prepared Pesto Mayo.
  • Layer the fresh basil leaves, tomato slices, and mozzarella slices on top of the mayo-covered bread slices.
  • Season with a pinch of salt and freshly ground black pepper.
  • Place the remaining bread slices on top to create two sandwiches.

3. Grill the Panini:

  • Preheat your panini press or grill pan to medium-high heat.
  • Brush the outer sides of each sandwich with extra-virgin olive oil to ensure a crispy golden crust.
  • Place the sandwiches in the preheated panini press or grill pan.
  • Grill for about 3-4 minutes or until the bread turns crispy and the mozzarella begins to melt.
  • If using a grill pan, press down gently with a spatula to create those iconic grill marks.

4. Serve and Enjoy:

  • Carefully remove the Caprese Panini from the press or grill pan.
  • Allow them to cool for a minute before slicing them in half.
  • Serve immediately while the mozzarella is still gooey, and the flavors are at their peak.

  • 4 slices of artisanal Italian breadAssemble Caprese Panini.

  • 1 large ripe tomato, thinly sliced

  • 1 fresh mozzarella ball, sliced

  • 1 cup fresh basil leaves

  • 2 tablespoons extra-virgin olive oil

  • Salt and freshly ground black pepper to taste

  • For the Pesto Mayo:

  • 1/4 cup fresh basil leaves

  • 2 tablespoons pine nuts

  • 1 clove garlic, minced

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup extra-virgin olive oil

  • 1/4 cup mayonnaise

  • Salt and freshly ground black pepper to taste


Grill the sandwiches.
