1. Prepare the Chicken:

  • Preheat your oven to 425°F (220°C).
  • Remove the chicken from its packaging and pat it dry with paper towels. Place it on a clean, spacious cutting board, breast-side up.

2. Season the Chicken:

  • Season the chicken generously, both inside and out, with salt and black pepper. Be sure to season the cavity as well.

3. Prepare the Herb Mixture:

  • Zest both lemons and add the zest to a mixing bowl.
  • Squeeze the juice from one of the lemons into the bowl with the zest.
  • Chop the fresh rosemary and thyme leaves finely and add them to the bowl.
  • Mince the garlic cloves and add them to the mixture.
  • Pour in the olive oil and stir the ingredients to create a fragrant herb paste.

4. Stuff and Truss the Chicken:

  • Stuff the chicken cavity with the remaining lemon half (cut into chunks) and a few sprigs of rosemary and thyme.
  • Use kitchen twine to truss the chicken by tying its legs together. This helps the bird cook evenly and retains its shape during roasting.

5. Apply the Herb Paste:

  • Carefully lift the skin of the chicken near the breast and thighs without tearing it.
  • Spread the herb mixture evenly under the skin, directly onto the meat. This step imparts the herb and lemon flavors directly into the chicken.

6. Place in the Roasting Pan:

  • Position a roasting rack inside a roasting pan and place the prepared chicken on top. Elevating the chicken on the rack allows for even cooking and helps the skin become crispy.

7. Roast the Chicken:

  • Put the roasting pan with the chicken in the preheated oven.
  • Roast for about 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) when measured with a cooking thermometer inserted into the thickest part of the thigh without touching the bone.

8. Rest and Serve:

  • Once the chicken reaches the desired temperature, carefully remove it from the oven.
  • Let it rest for about 10 minutes before carving. This allows the juices to redistribute, ensuring a moist and succulent result.

  • 1 whole chicken (about 4-5 pounds)

  • 2 lemons

  • 4-5 sprigs of fresh rosemary

  • 2 tablespoons of olive oil

  • Salt and black pepper to taste


Prepare the chicken.
Season and apply herb mixture.
Stuff and truss.
