Warm & Comforting Tomato soup – Easy Recipe

Tomato soup is a classic comfort food that is loved by many for its warm and comforting flavors. The combination of ripe tomatoes, aromatic herbs and spices, and creamy texture make it a perfect meal for cold evenings or rainy days.

  • 2 lbs ripe tomatoes, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream (optional)

Cooking Instructions:

  • Heat olive oil and butter in a large pot over medium heat. Add onions and garlic and sauté until softened and fragrant.
  • Add the chopped tomatoes to the pot and cook for 5-7 minutes until they begin to break down.
  • Add broth, dried basil, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes.
  • Remove the pot from heat and let the soup cool for a few minutes.
  • Puree the soup in a blender or with an immersion blender until it’s smooth and creamy.
  • If you want a creamier soup, add heavy cream and blend again.
  • Serve hot, garnished with fresh herbs or croutons if desired.
